Carrot muffins For Mr. Tim

This recipe was created by me.
The brands are only a suggestion, this is what I use.    


Bake at 350°     You will need Muffin Pan and Muffin Liners
Bake for 25 minutes.  Let cool in pan for five and then remove.
This will make approximately 20 muffins.
Enjoy
3/4 cup of wheat flour 
1 cup of flour
3/4 cup of shredded carrots
1/4 cup of raisins
3/4 cup oatmeal
1/4 cup of sweet coconut
1/2 cup of  ( walnuts or pecans)
1/4 teaspoon fresh ground nutmeg
1 teaspoon of salt
1/4 teaspoon of ginger
1/2 of allspice
1/4 teaspoon of cloves ( not in picture)
1/2 teaspoon of cinnamon ( not in picture)
1 1/2 baking powder
1 baking soda
All combined in one bowl

3/4 cup softened butter
1 cup sugar
3/4 cup brown sugar
Cream together. Then beat eggs in one at a time
2 eggs
All combined in one bowl

1/2 cup milk
1/4 cup orange juice 
1/2 cup crushed pineapple ( well-drained)
2 tablespoons of molasses
2 tablespoons of vanilla
All combined in one bowl

Put contents of all 3 bowls into one.  Stir just till combined. Spoon into liners till about 3/4 full. Bake till done.

Dry Ingredients
All combined into one bowl
Fill muffin liners to 3/4 full
Let cool for 5 min
Enjoy!
